Big Mac Casserole

Big Mac Casserole has all the classic burger flavors you love without the bun!  Easy fresh ingredients that include ground beef,  cheese, diced potatoes, lettuce, onions, pickles and of course the special sauce!

Love the flavor of a classic Mig Mac but hate the fat and calories?  Ya, us too!  Not only is this healthier it’s totally familty friendly!

Kids and grown ups love this Cheeseburger Casserole!

Ingredients for Big Mac Casserole –

  • ground beef – or ground chicken or turkey if you prefer
  • russet potatoes – cubed with peel on..yay!
  • white onion
  • dill pickle chips
  • onion powder
  • iceburg lettuce
  • tomatoe (not classic  but we like it!)

Special Sauce :

  • greek yogurt (or mayo, we went low fat with the yogurt this time and loved it!)
  • yellow mustard
  • ketchup
  • sweet relish
  • diced white onion
  • vinegar – just a pinch

Start by browning your beef and onions.  Pour into a 2 quart casserole dish. An 8 x 8 baking dish works great as well.

NOTE: Need a big casserole?  Double this recipe to fit into a 9 x 13 baking dish!

After adding the browned beef to the casserole dish, toss the diced potatoes in the skillet to brown then combine with the beef.

 

How to make Big Mac special sauce –

This wouldn’t be a Big Mac Casserole without the special sauce!  We opted for greek yogurt for the base (any fat content you like), but you can sub Mayo or Light Mayo – or go rogue and use half yogurt and half mayo!  Ketchup and yellow mustard add more flavor plus a little acid from some vinegar.

Simply mix it all up and your ready!

Mix half of that sauce with the burger and potatoes.  Cover and bake for 20 minutes.

The special sauce flavors the meat and potataoes as well as keeping it from drying out.

Cheeseburger casserole

Remove the cover and top with cheese.  Bake an additional 5 minutes until the cheese is all melty!

Top with all the Big Mac fixins – iceburge lettuce, onion, pickles and a sprinkle of sesame seed just like the bun!

Big Mac Casserole

All the flavors of the classic burger in cassderole form!

Ingredients

  • 1 pound ground beef - ground turkey or ground chicken can be substituted
  • 1 large russet potato - unpeeled and diced. About 1 1/2 cups.
  • 1/2 cup white onion - diced
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup grated cheddar cheese

Special Sauce

  • 1 cup greek yogurt - or mayonnaise or a combo of both
  • 2 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 1/4 cup sweet relish
  • 2 tablespoons white onion - minced
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt

Toppings

  • 2 cups shredded iceburge lettuce
  • 1/2 cup diced tomatoes
  • 1/3 cup dill pickle chips
  • sprinkle of sesame seeds

Instructions

  • Brown ground beef and onion in large skillet. Stir in onion powder, salt and pepper. Remove all but 2 tablespoons of accumulated grease if any.
  • Spoon into 2 quart casserole dish or 8 x 8 baking dish.
  • Add diced potatoes to skillet and brown. ( The potatoes do not have to be cooked all the way through as they will bake with the casserole.) Add potatoes to browned ground beef.
  • Add half the special sauce mixture to the beef and potatoes. Stir until well combined. Cover and bake for 20 minutes.
  • Remove from oven and top with cheese. Bake 5 more minutes until cheese is melted.
  • Top with chopped lettuce, tomato, pickles, sesame seeds and a drizzle of special sauce.

Notes

NOTES - double this recipe for a larger 9 x 13 casserole.
If eating individual servings top as you go to keep the lettuce nice and crunchy.
Store in the refridgerator for up to 3 days.  Freeze for 3 months (without the toppings)
